One of the best things about being a vegan student in Liverpool was visiting the Egg cafe for American style pancakes in the morning. I found a great vegan pancake recipe from the wonderful Isa Chandra Moskowitz,and here it is! I’ve added more cinnamon and golden syrup than the original recipe because I think it tastes better.
If you want to make your pancakes look waffly fry them in using a griddle pan.
You will need:
150g/5oz plain flour
2 tbsp baking powder
1/2 teaspoon salt
2 tsp ground cinnamon
2 tablespoons of vegetable oil
5 tablespoons of water
1/2 pint soya milk or your favourite nut/oat milk
1 teaspoon vanilla extract
3 tablespoons golden syrup
Golden syrup or maple syrup
