Savoury Rice

There is never a good reason to buy packet savoury rice when you can make you own at home AND use up all of those vegetables that are about to turn.  You can serve this with pretty much anything, or turn it into a main by crumbling some marinated tofu into it or adding your favourite tinned beans/peas.

Serves 4-6 as a side or 2 for a main

You will need:
1 cup of white rice
2 cups water
Olive oil
1 medium red onion
4 or 5 chestnut mushrooms
1 medium carrot
1/3 cup sweetcorn
1 vegetable stock cube (Oxo is good for this)
Salt and pepper

1. Bring the rice to the boil in water (always use double the amount of water to rice), put the lid on and turn the heat down.  Cook for 10-12 minutes or until the rice is soft.
