2 large sweet potatoes
1/2 cup black beans
1 cup panko bread crumbs
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon onion salt
1/2 teaspoon olive oil for cooking
2 tablespoons non fat plain greek yogurt
1/2 teaspoon chili flakes
1/2 teaspoon paprika
Bake your sweet potatoes for approx 1 hour at 350 or until they are soft throughout. Let them cool for about 20 minutes or until you can handle them. Scrape out sweet potatoes and mix all ingredients in a large bowl. Heat oil in pan to high, form patties and drop in pan. Cook evenly on both sides and cover for approx 10 minutes to cook internally.
Top your bun with yogurt sauce, patty, and other fixings of your choice. We went with avocado and a delicious aged oka on ours.
